The Hummus Thread

Post by Crumpty Williams » Sat Feb 16, 2008 11:42 am

Anything and everything about hummus--whether you're vegetarian or not: Questions, comments, thoughts, whatever... I'll start:

Hummus and Crumpty:
I've recently turned into a hummus head. I think raw veggies and hummus make a freakin' delicious snack and is a greaty healthy alternative to chips and dip or whatever other kind of fatty snack foods are out there. I think my favorite kind of hummus so far is the jalapeno flavor made by Wild Garden. I just discovered this the other day and it's awesome. I'm also a fan in general of garlic and roasted red pepper varieties.

Questions about hummus:
What's your favorite kind of hummus?

Why are some kinds of hummus pre-refrigerated and others not?

Is hummus really THAT healthy?

Hummus tidbits:
Pickles and hummus: Delicious (I'd this even beats out pickles and peanut butter...)

Discuss....
i fucking rule.

well... chickpeas are a really good source of protein. you can also get your vitamin c, iron, and fiber from them. and your basic hummus is just chickpeas with tahini (which is essentially just sesame seeds), garlic, and lemon juice, so... there aren't really any unhealthy ingredients.

its much better when you make it yourself. garbanzos, olive oil, water, garlic, lemon juice. i usually add salt, pepper, red pepper flakes but you can add whatever. if you put it in the fridge and cover it with a small amount of olive oil it keeps for about 2 weeks(not that it lasts that long) and stays spreadable.

I was on a huge hummus kick a while back. The Jalapeno Wild Garden and the Roasted Red Pepper of the same brand were my faves. I love the chipotle hummus at the Continental, also. Better than bean dip, in my opinion. Alas, I grew tired of it, but still rock some occasionally.

A long time ago this girl wanted to make me Turkish food, so I went with her to the store to pick out the ingredients. We went looking for chick peas to make it and we couldn't find them anywhere. I cursed all the third world assholes who you always hear getting bags of chick peas, thus making it so I couldn't get any. Turns out they're usually called garbonzo beans around here.

Anyways, the hummus this girl made was pretty shitty. I ate dinner at her parent's house once and they made hummus and it was pretty shitty too. I liked all the other hummus I've had though. End of story.

And on that note, I'll re-pose this question:
Crumpty Williams wrote: Why are some kinds of hummus pre-refrigerated and others not?
I haven't noticed any major differences in ingredients (like preservatives) that warrant these differing treatments...

i think its mostly the packaging. most fridge hummus is plastic disposable. shelf hummus is usually in a can. the can ones taste... more like a can.

The "shelf hummus" that I've bought tends to be in a jar. And so far, I'd say that Wild Garden stuff (from the shelf, in a jar) has beaten out any other pre-refrigerated hummus that I've tasted...

I would venture a guess that its cracked peppercorns that are then seasoned with chili peppers.
